I am an advocate of the paleo way of eating for everyone and especially for t1 diabetics. The paleo approach involves eating real, whole foods along with healthy sources of meat, fish, and eggs.
The vegan approach involves real, whole plant based foods. These two approaches to eating overlap significantly. My breakfast often includes sauteed kale, onions, mushrooms, nuts or seeds, and eggs. Clearly, this meal wouldn’t be hard to adapt to the vegan eater, just cut out the eggs.
My point is that arguing about the two approaches is distracting from the fact that either approach is beneficial to the t1 diabetic and far healthier than the mainstream high carbohydrate approach.
